- Vegetable stock
- 2 cloves garlic
- 2 medium potatoes
- Olive oil
Wash the potatoes and boil them in water with a pinch of salt until they are fully cooked. Drain and put to one side.
Soak the Bite-size pieces in boiling water with vegetable stock for 5 minutes. Drain excess water. Add garlic with the skin still on to a frying pan with 3 splashes of oil and fry over a high flame. When the skin starts to break away and brown, add the bite-size pieces and fry on each side for 1 minute until golden.
Add the potatoes to the oil and garlic and fry.
